This recipe is the perfect healthy snack. The chickpeas are packed with protein and fill you up quick! (Especially if you are like me and my friends and devour them all as soon as they are out of the oven.) Even if you don’t usually go for anything spicy, trust me, these are good. They will not hurt you, they will only make you happy. As an added bonus, they are just so ridiculously easy!
Literally All You Need Is:
- 1 15oz can of chickpeas, rinsed and drained
- Cajun seasoning
- Olive oil
- Aluminum foil
- Sheet pan
Step One: The thing I always seem to forgot until I’m half way through any recipe, PREHEAT YOUR OVEN! To 400° please. Then rinse and drain those chickpeas! Once they are rinsed lay out a paper towel out on a plate, and carefully transfer the chickpeas onto the paper towel. Take another towel and cover the chickpeas, the goal is to get all the water off of them (so they can get nice and crispy in the oven!).
Step Two: Once your chickpeas are dry, line a sheet pan with aluminum foil. Place the chickpeas in the pan and drizzle with olive oil, all over. Sprinkle on the Cajun seasoning, I gave my chickpeas and nice dusting of seasoning so all the chickpeas were covered. Then, sprinkle with a little salt.
Step Three: Mix all your chickpeas together to get all the oil and delicious seasoning all over them. Then, put them in the oven for about 10 – 15 minutes.
Step Four: Switch your oven over to “Broil” on high and cook those chickpeas another 2 minutes. This will give them a nice crisp on the outside while the inside remains soft!
Seriously these were so simple, I did them while I was in the middle of cooking dinner, and my friend and I devoured them in about 15 seconds.
