Like I’ve said, I’m getting into the pumpkin spirit! My mom bought a pumpkin for our front steps, so I decided I should gut it and roast the seeds! Well all the props go to my boyfriend for this one since, he technically did most….or all…of the work on this. He brought the pumpkin inside and totally gutted it, he even made me a jack-o-lantern. All I did was wash the seeds and throw some spices on them.

I had made pumpkin seeds in the past but they DID NOT come out as good as they did this time. The key is to dry them, otherwise they won’t get crispy!

Also can we talk about the best jack-o-lantern ever! I love him (the jack-o-lantern but also my boyfriend.)


Spicy Roasted Pumpkin Seeds
Super easy healthy snack! All you need are seeds and spices!
Ingredients
- Pumpkin seeds
- 1 Tbsp Cayenne pepper
- 1 Tbsp Smoked Paprika
- 1/4 tsp Oregano
- Salt
- 2 Tbsps Olive Oil
Instructions
- Heat your oven to 400° and spray a sheet pan with non-stick spray.
- Pat the seeds dry using two paper towels and spread dried seeds over the pan.
- Drizzle with olive oil, sprinkle with cayenne and smoked paprika. Add oregano, and salt to taste. Mix around, and spread out seeds forming one layer.
- Bake for 15 minutes.
