Chocolate Chip Pumpkin Oat Bars

These pumpkin oat bars are sure to win your heart this fall season. Break out to pumpkin puree, and the hot chocolate and get into the fall season. These pumpkin oat bars are perfect for breakfast, snacks, or even dessert! I know we've been eating them all day. and can't get enough!

Ingredients
  

  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar lightly packed
  • 3 large eggs
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 cups pumpkin puree
  • 1 tsp vanilla extract
  • 2/3 cup chocolate chips

Method
 

  1. Heat oven to 350° and lightly grease a 8 x 8 baking dish (I used pam for baking, but regular butter would work as well.)
  2. Combine all ingredients into a large bowl and mix thoroughly. Press batter evenly in 8 x 8 baking dish.
  3. Cook 25 - 30 minutes. Let cool completely before trying to cut.
