Decadent Butterscotch S'mores Bars

These decadent butterscotch s'mores bars are a great throwback to those late summer nights around the fire pit.

Ingredients
  

  • 1 cup butter melted
  • 1 cup sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 sleeves graham crackers crushed
  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips
  • 3 cups mini marshmallows

Method
 

  1. Preheat your oven to 350° and grease a 9 x 13 pan or baking dish.
  2. In a large bowl, mix together the butter, sugar, and brown sugar until thoroughly combined and smooth. Add eggs, and vanilla and combine.
  3. Mixing thoroughly after adding every ingredient, add flour, baking powder, salt, and crushed graham crackers.
  4. Take about 3/4 of the dough mixture and press into your greased pan. I found it be be very sticky, so I sprayed some baking pam onto my hands before handling the dough.
  5. Bake the dough for 15 minutes, and remove from oven. Add the chocolate chips, and butterscotch chips. Bake another 5 minutes.
  6. Remove from oven again, and add the marshmallows on top. Along with the remaining 1/4 of the dough. Break dough into small pieces over the top, not entirely covering all the marshmallows.
  7. Bake another 10 minutes, remove from oven, and let cool at least 20 minutes before cutting.
