This Sausage & Spicy Potato Hash is one of those recipes that I created simply because I had stuff in the fridge I needed to use. I had one sausage patty left, hanging out in the fridge. And don’t even get me started on those potatoes. I was almost nervous to open our potato drawer today. Last time I went in there I was ASSAULTED by a rotten potato. It was…the worst thing to ever happen to my nose. It haunted me for days.
But fear not, we checked and thoroughly washed all the other potatoes and the drawer. So the potatoes I used this morning were perfectly fine, and delicious. In fact I was just going to share this on my Instagram, but I thought it was too good not to share the entire recipe on here as well!
One Pan Breakfast
Nothing is easier than a one pan meal. Well, maybe takeout is easier. But that’s not the point, I ordered breakfast two days ago, and lunch yesterday. I know, I’ve been bad! Does it make it better than I went almost two weeks takeout free? I’m trying to do it again now, it’s not my fault I’m always craving salty fast food!
At least, with salty potatoes and sausage in this Sausage & Spicy Potato Hash my craving for salt is fulfilled! And I get a nice healthy breakfast, for MUCH less money.
Didn’t need anything extra for this breakfast, just a few random things in the fridge. And spices, but we have a very well stocked spice cabinet here. Really, we’re running out of space, the whole cabinet is overflowing. And there are so many spices I don’t have yet! Where am I going to put them all?!
A Quick, Easy Meal
I love a good one pan meal, even more so when I don’t have to stand over it the entire time stirring. With this Sausage & Spicy Potato Hash once everything goes into the pan, it’s just a waiting game (with some occasional stirring.) All you need is a little sausage, (I used one of those sweet Italian sausage patties), some yukon gold potatoes, diced onions, and spices. I used paprika, chili powder, and cumin, but you can use anything you want! Whatever your favorite spices are! It’s fun to experiment.
Easy Sausage & Spicy Potato Hash
- 1 or 2 sweet Italian sausage patties
- 1 small onion diced
- 1 medium potato diced
- 1 1/2 Tbsp butter
- 1/2 Tbsp paprika
- 1 tsp chili powder
- 1 tsp cumin
- pinch of red pepper
- salt and pepper to taste
- 4 large eggs
- Break up sausage patties and add to pan over medium heat. Let brown a few minutes, then add potatoes and onion.
- Add spices and stir to combine. Let cook stirring occasionally for 15 minutes.
- Add butter, and stir to coat potatoes. Let cook stirring occasionally for another 20 minutes, or until potatoes are soft.
- Drop eggs into pan, and cook covered for 5 – 7 minutes depending on how cooked you like your eggs.
