This deliciously simple pasta with spicy sausage and green onions will be your new favorite weeknight dinner. Only four ingredients are needed to make this pasta, and two of them are in the title! All you need for this sauce is a 28oz can of crushed tomatoes, heavy cream, the spicy sausage, and green onions! It really easy a super easy, and surprisingly decadent dinner.
Spicy Sausage and Green Onions?
Honestly, I know, it sounds kind of strange. I would never have thought to put these two together. When I think of green onions, I generally think of them as a garnish. But a couple years ago, when my boyfriend and I first started dating, I asked my friend for restaurant recommendations. And one of the first places she mentioned was Emilio’s on Long Island.
So of course we had the check it out, and it’s been one of the favorite restaurants ever since. It’s amazing Italian food, HUGE portions, and great wine. So naturally it became out date night spot. Philip and I would go, order WAY to much food, and a bottle of wine, and it would be a great night. And as a bonus, we’d get to eat all the leftovers to next day, like a second date night.
Though as COVID still remains a huge problem here in NY, and in the US as a whole. We haven’t been out to eat at Emilio’s in a looooong time. And while we have ordered (a lot) I figured, maybe I should try making our favorite pasta so we can do date night at home. (Don’t get me wrong, the pasta is good but it’s not Emilio’s, so as soon as COVID is not a risk anymore, best believe I will be forcing Philip to go out for a proper date night. I mean, I have a HUUUUGE closet of cute dresses that I didn’t get to wear for the entirety of 2020 – it’s a shame!!!)
Copycat Emilio’s Pasta
So I’m sure you can guess where I’m going with this right? Every time, without fail, I order the same thing at Emilio’s. I’m not boring, I promise! It was a rare occasion that Philip and I do date night and go out to eat, or order in. So of course, I always wanted the same thing, the Cavatelli Sardinia. Which of course, is pasta with spicy sausage and green onions. So my recipe that I’m sharing today is inspired by my favorite Emilio’s pasta. Our go to date night pasta. (I even got Philip to agree with me that it’s one of the best things on the menu, and now he orders the same thing every time too!)
Trust me, it’s soooo delicious and creamy. The chef at Emilio’s created a masterpiece with that dish, and if you’re ever on Long Island, I strongly recommend Emilio’s. Everything on their menu is amazing. Who knows maybe since I can make this one at home now, I can start ordering something new!!
Valentine’s Day Date Night
I’m really looking forward to Valentine’s day this year, because I’ll actually get to spend it with Philip. Because we live so far apart at the moment, we really only get to see each other on weekends. And although Sunday night is D&D night (we’ll see about that…) we will still get to celebrate together. But because we can’t go out to eat, and we can’t order in because we’re in money saving mode (so that we can move in together one day soon) I decided it would be a perfect night to make this pasta with spicy sausage and green onions again.
Not only is it delicious, creamy, and spicy, it’s super quick and easy too! That way we can spend more time drinking wine and relaxing together instead of in the kitchen all night. (Mostly because given what else I have planned for this weekend, it seems like we’ll be in the kitchen from Friday night to Sunday night non-stop. Babe, if you’re reading this, isn’t it so fun to date a food blogger??)

Pasta with Spicy Sausage and Green Onions
Ingredients
- 1 lb pasta of your choice
- 1 lb spicy Italian sausage
- 1/2 cup green onions chopped
- 28oz can crushed tomatoes
- 1 cup heavy cream
- pinch of red pepper
- salt to taste
Instructions
- Cook pasta according to package directions.
- Remove casing from sausages and cook in a large pot over medium – high heat, breaking up into bite size pieces. Cook all the way through, about 15 minutes.
- Add green onions and cook an additional 5 minutes until they are getting soft and darker green.
- Add crushed tomatoes, salt, red pepper, and heavy cream. Stir to combine and bring to a boil, lower heat and simmer for 20 minutes.
- Add pasta into sauce, stir to coat pasta. Serve with fresh basil and cheese.
