Now that we are officially deep into the pumpkin season, I figured it would be time to introduce my parents to something new for breakfast! We are usually a Bisquick family, so I was happy to step out of our comfort zone and present them with something they’d never even thought of before. My boyfriend, however, was not pleased with the idea of the pumpkin and opted just to watch me eat the second course of our extravagant Saturday breakfast. This was not surprising at all coming from the man who pretends to vomit when I order a pumpkin spice coffee from Dunkin, yes I am one of THOSE girls.
All You Need Is:
- 2 cups all purpose flour
- 2 tsps baking powder
- 1 tsp baking soda
- 2 large eggs
- 3 cups buttermilk
- 4 Tbsps unsalted butter, melted
- 1 cup pumpkin puree
- 1/2 Tbsp cinnamon (or more depending on how much you love cinnamon)
- 1 tsp nutmeg, allspice, ground ginger, and cloves
- Mable syrup (for serving)
- Large skillet, and extra unsalted butter to grease the pan
Step One: We all know pancakes are super easy, step one is obviously: combine all the ingredients in a bowl and whisk together until smooth!


Step Two: Heat your skillet over medium – high heat, and melt a sliver of butter in there, to cover the pan. Ladle the pancake mix in, and wait until your pancake starts to bubble, that’s when you know it’s time to flip it!

Keep repeating the process until you run out of pancake batter, and remember to butter your pan again between every batch!
